EDIBLE COOKIE DOUGH, that has some health benefits; it doesn’t get much better than that!
This choc chip cookie dough is made up of simple, natural, delicious ingredients that don’t leave you with a stomachache.
I remember as a kid I LOVED eating the batter of anything, cookies, cakes, brownies, etc. But I would have to sneak it because batter the contained raw eggs & my mom didn't want me to feel sick.
Well, I have figured out a way to make cookie dough without eggs, and let me tell you, it's amazing!
One of the main ingredients in the dough are garbanzo beans (chickpeas). Garbanzo beans are packed with vitamins & minerals and are a good source of fiber & protein.
Ingredients you will need:
1 cup pitted dates (pre-soaked for about 5-10 minutes in water, then drained)
1 can garbanzo beans (drained and rinsed)
1 cup oat flour
2 tbsp almond or cashew butter
1 tsp vanilla extract
1/3 cup plant milk (I used oat milk)
1/4 cacao nibs
Directions:
1. Add dates, garbanzo beans, plant milk, nut butter & vanilla extract into food processor until smooth consistency. **add water or more plant milk if necessary.
2. In a large bowl, add oat flour and the mixture from the food processor and mix together.
3. Add the cacao nibs to the mixture in large bowl and mix until evenly distributed.
4. Place into air tight container and place in fridge!
