Winter Pomegranate Salad

If you’re looking for a holiday season side dish, I've got one for you. This combines all the fruits and veggies available during cooler months. It is packed with flavor, you can whip it together in no time and it is bursting with flavor.



Ingredients for salad:

  • 3 cups kale, finely chopped

  • 1/2 head purple cabbage, finely chopped

  • 1 cup quinoa, cooked

  • 2 large carrots, shaved into ribbons

  • 1 cup pomegranate seeds

  • 1/2 cup almonds (or nuts of choice), lightly chopped

  • sea salt & pepper to taste


Ingredients for dressing:

  • 2 tbsp tahini

  • 2 tbsp maple syrup or honey

  • juice from 1 lemon

  • sea salt, to taste

  • 1 tbsp water + more to get consistency you like


Directions:

1. Make the dressing by adding all the ingredients in a small bowl and whisk to combine until well-combined. Then, set aside.


2. In a large bowl, add the kale, cabbage, quinoa, carrots, pomegranate seeds and nuts together. Then, pour the dressing over the salad and mix to evenly coat.
