Chia Pudding!

Similar to overnight oats, chia pudding is a great, protein-rich breakfast option that you can make the night before, store in the fridge overnight, grab & go in the morning! They are super creamy from the coconut milk & the chia seeds puff up into a gel like consistency making a unique & satisfying texture.


Chia seeds have a VERY impressive nutritional profile for being such a small seed. If you don’t eat chia seeds already, you should definitely consider adding them into your diet & below are the reasons why!


They aid digestion, increase energy, support blood sugar regulation and weight loss and improve brain function.


Also, they are loaded with fiber, protein, omega-3 fatty acids & multiple micronutrients. They are high in antioxidants as well as calcium, magnesium, phosphorus; nutrients that are essential for bone health. All the GOOD stuff!




Ingredients you will need:

  • 2 cups coconut milk (any plant-based milk)

  • 1/2 cup chia seeds

  • 1/4 cup maple syrup

  • 1 tbsp coconut sugar or brown sugar

  • 1 tsp vanilla extract

  • 1/4 tsp cinnamon

Recommended Toppings:

  • blueberries

  • raspberries

  • blackberries

  • coconut yogurt

  • cinnamon

  • coconut flakes

Directions:

1. In a large mixing bowl, place all wet ingredients & whisk together until evenly combined. Then, slowly pour in the chia seeds, stirring continuously.


2. Distribute the mixture evenly into two small mason jars or plastic containers. Put on an tight lid & place into the fridge overnight.


3. Remove from the fridge, top with you favorite fruits & yogurt.
