Sweet Potato & Kale Salad

This is the true depiction of eating the rainbow! This salad really has all the flavors and is a hearty, delicious salad. You can easily add in your favorite roasted veggies to make it your own. I highly recommend not skimping on the dressing though…SO GOOD!

Ingredients for the base of the salad:

  • 5 cups greens (kale, arugula spinach), finely chopped

  • 1 cup quinoa

  • 1 ripe avocado, cubed

  • 1 tbsp lemon juice

  • 1 tbsp apple cider vinegar (optional)

Ingredients for the roasted chickpeas (*optional):

  • 1 (15 oz) can chickpeas, drained & rinsed

  • 1 tbsp olive or avocado oil

  • 1/2 tsp sea salt

  • 1 tsp curry powder

  • 1 tsp garlic powder

  • crack of pepper

Ingredients for the roasted veggies:

  • 1 zucchini, sliced

  • 1sweet potato, sliced

  • 1 cup purple cabbage, shredded

  • 1 tbsp olive or avocado oil

  • 1/2 tsp curry powder

  • 1/2 tsp garlic powder

  • pinch of sea salt & pepper

Ingredients for the dressing:

  • 1/3 cup tahini

  • 1 lemon, juiced

  • 1 tbsp tamari or soy sauce

  • 1 tbsp maple syrup

  • 2 cloves of garlic, minced

  • 1/2 tsp sea salt

  • a few tbsp of filtered water to thin, if necessary



Directions:

1. In a large bowl mix all 'Base of Salad' Ingredients together. Mix until evenly coated in the lemon and apple cider vinegar.


2. *OPTIONAL - Preheat oven to 350 F. Mix all ingredients together for the roasted chickpeas and lay flat on a parchment lined baking sheet. Cook for 40-50 minute until golden brown.


3. Up the oven heat to 375 F. Line a baking sheet with parchment paper. Roast for 20 minutes or until tender and slightly golden brown.





4. Make dressing by adding all ingredients in a small bowl and whisk together until evenly combined.


5. Assemble the salad by adding the roasted veggies to the salad base, topping with the roasted chickpeas and drizzling on the dressing. Mix and enjoy.
